Easy Mocha Rum Cheesecake Recipe

Serves: 10-12

Ingredients:
For Base:
175g Dark Chocolate, finely crushed
75g Butter, melted
½ tsp Mixed Spice

For Filling:
500g Cream Cheese
125g Caster Sugar
125g Dark Chocolate
150ml Sour Cream
2 tbsp Dark Rum
1 tbsp Corn flour
1 tbsp Coffee Granules
3 Eggs

For Decoration:
Dark Chocolate, grated
Cocoa Powder for dusting
Chocolate Coated Coffee Beans

Method:

·         First of all, preheat the oven at 150 degree Celsius.
·         Take the cake tin and grease it lightly with oil or butter.
·         Mix biscuits along with mixed spice and butter in a mixing bowl and mix it well and place this mixture at the base of the baking tin.
·         Bake the mixture in oven for about 10 minutes and then cool it off.
·      Prepare the filling by melting chocolate in a bowl over a double boiler at sim heat, while stirring it continuously.
·         It’s time to combine corn flour with cream cheese, sugar, sour cream and eggs in a large bowl to make a smooth batter.
·         Now, pour this mixture over the prepared base and tap the tin sharply to set the air bubbles and bake it for about 45 minutes to 1 hour until the top of the cake is set.
·         When baked, remove it from the oven and cool it off in a refrigerator for about 5 hours.
·         Prepare the decoration by cutting the cake into half using a sharp knife.
·         Now, sprinkle the grated chocolate along with coated coffee beans and dust the cocoa powder.
·         Your delicious Mocha Rum Cheesecake is now ready to be served.

300ml Rum
4 tbsp Granulated Sugar
3 Cloves

Method:
·        Mix red wine, sugar, cinnamon sticks, cloves, nutmeg, lemon, rum and orange zest in a large steel saucepan.
·        Warm the mixture until it arrives a simmering point.
·        Now, add orange along with lemon juice.
·        Cook for a few minutes and leave it to cool aside.
·        Serve the Exotic Christmas Punch in tall tumblers.

Ingredients:
4 medium Eggs
240g Caster Sugar
220g Plain Flour
100ml Milk
100g Unsalted Butter
60g White Chocolate, grated
2 tsp Ground Nutmeg
2 tsp Baking Powder
2 tsp Ground Cinnamon
2 tsp Vanilla Extract

Ingredients for the Frosting:
250g Icing Sugar, sifted
125g Unsalted Butter
100g White Chocolate
2 tbsp Double Cream
1 tsp Ground Cinnamon
Cinnamon Sticks

Method:
·        Preheat the oven at 180C and grease a cupcake tray with 12 cupcake cases.
·        Whisk the butter with caster sugar in a bowl and mix in vanilla extract and beat in the eggs one by one along with some flour. Pour in the milk as well and mix it.
·        Add in the mixture flour with baking powder, cinnamon and nutmeg and mix it well.
·        Mix chocolate in this mixture and fold it to distribute equally.
·        Now, fill the cupcake cases 2/3rd with this prepared eggnog batter.
·        Bake the cupcakes for about 20 minutes or until they are golden brown on the top.
·        Let the cakes cool down.
·        Prepare the frosting by melting white chocolate in a double pan on hot water but be careful.
·        Now, whisk the butter, icing sugar and double cream and add in it the melted chocolate mixture and mix it all well.
·        Take the cool cupcakes and top them with this prepared frosting using a small spoon or a pipe. Decorate using ground cinnamon and sticks.

Method:
